REGU09016 2019 Supply Chain Integrity
The aim of this module is to provide a comprehensive overview of logistics and supply chain management in the food industry, as well as the strategic importance of effective supply chain design and the regulations associated with it.
Learning Outcomes
On completion of this module the learner will/should be able to;
Discuss the principles of sustainable food supply chain
Interpret the performance and challenges within the food supply chain
Examine the food fraud and authenticity to increase the integrity within food chain
Summarise transparency within the food supply chain
Discuss traceability and its implementation across the supply chain and identify different strategies for a competitive supply chain
Teaching and Learning Strategies
This module will be delivered in a blended learning format (Online delivery) using a combination of distance-learning / e-learning and one workshop for an overall blended learning approach.
Module Assessment Strategies
This is a 100% CA module and the students will be assessed individually and as groups through a variety of assignments: group report, short assessments and scenario based assignment.
Repeat Assessments
Learners will repeat either the written assignment or the short assessment with assignment guidelines provided.
Indicative Syllabus
- Supply chain fundamentals: definition, objectives, management, function and importance
- Issues and challenges: food retailing, food logistics, collaboration, food sourcing and procurement
- Brief overview on the Food fraud and authenticity. Eg: emerging issues and prevention methods
- Transparency in the food supply chain: environmental, social and ethical impacts related to food
- Summarise the guidelines on the implementation of traceability across the supply chain. Eg: TRACES; The Rapid Alert System for Food and Feed, RASFF
- Assessing various strategies and design in the supply chain. Eg: case studies on risk ranking / risk mitigation
