Description

This module is primarily for students who have completed general biochemistry courses previously and who are now advancing their knowledge of nutrition biochemistry in energy metabolism, regulation of food uptake and a detailed consideration of Carbohydrates, Lipids, Vitamins, Macromaterials and Trace Metals and associated disorders. Students must obtain a minimum of 40% in both the Continuous Assessment and Final Exam to pass the module

Learning Outcomes

On completion of this module the learner will/should be able to;

1.

Fully understand and explain the overall nature of nutrients, their contribution to the nutritional state of the human body and how imbalances, deficiencies and excesses lead to the mal-nutrition state.

2.

Analyse and exhibit a deep comprehension of the importance of Energy changes within living systems with particular emphasis on the role of nutrition.

3.

Demonstrate a detailed understanding of the biochemistry of carbohydrates, lipids, fat-soluble and water-soluble vitamins, macromaterials and trace-materials, their roles in nutrition and associated disorders.

4.

Experimentally identify and analyse a genetic marker for a nutritional disorder, evaluate urine and blood borne markers for nutritional well-being, Understand the fundamentals of how a bioassay works.

Teaching and Learning Strategies

An in-depth view into the biochemistry of nutrient digestion, absorption, excretion and some associated disorders. To be delivered through lecture and laboratory based teaching. Regular evaluation of learning through weekly moodle based tests. Evaluation of lab-based learning through lab-reports and overall learning through end of semester written exam

Module Assessment Strategies

Informal and formal ongoing assessment regimes achieved through lab report evaluation and weekly continuous assessment. These results will then be fed-back to the student as the module progresses. Formal continuous assessment will also be carried out through a written exam at the end of semester.

Repeat Assessments

Repeat written exam and or continuous assessment to be set on a case by case basis, however students will be asked to repeat the written exam component and or either of the continuous assessment components, where a mark of less than 40% was obtained in a component

Indicative Syllabus

The importance of Energy changes within living systems with particular emphasis on the role of nutrition.

Regulation of food uptake in terms of physiology and psychology. Associated disorders such as obesity anorexia and bulimia will be introduced.

The control of satiety versus appetite.

In depth biochemistry of glycolysis, gluconeogenesis, Krebs Cycle, Oxidative Phosphorylation, Urea Cycle and Beta fatty acid oxidation

 

Understanding of how all dietary sources of energy are utilised such as amino acids and fatty acids and their nutritive value

 

The Biology of non-nutrient / non digestible components of food including NDCs, polyphenols, toxins and amines. The nutritional benefits of NDCs including microbiota, cancer and other disorders

The structure, function and types of adipose. The diagnosis and treatment of obesity and its effects on the body including insulin tolerance and general health and well being


Fat-soluble vitamins their bio-potency, structure/function and disorders associated with their deficiencies.

Water-soluble vitamins & their structure, function, absorption, distribution, toxicity and deficiencies.

Macro-materials sodium, potassium, calcium; their regulation, bioavailability, deficiencies and requirements.

Trace minerals, their absorption, excretion, metabolism, toxicity, deficiency and function.

The analysis of diet modification at an in vitro level and an introduction to the technique of cell culture
