NUTR06017 2019 Nutritional Biochemistry 2
This module will enable the student to explain key elements of cellular metabolic processes of relevance to human nutrition.
Learning Outcomes
On completion of this module the learner will/should be able to;
Explain key characteristics of enzymes and experimentally determine enzyme activity and some key properties.
Have an overview of the absorbance, transport, metabolism and or storage of non-nutrients and key nutrients such as carbohydrates, protein, lipid, alcohol and water
Outline the characteristics of the following nutritionally-important metabolic processes: Urea Cycle, Oxidative Phosphorylation; Krebs Cycle; Gluconeogenesis; Beta Fatty Oxidation.
Differentiate between gross energy, digestible energy and metabolizable energy as well as assessment of the metabolizable energy of a diet.
Understand the basics of DNA, its structure, function and implications of damage in nutritional context
Demonstrate proficiency in the performance of a variety of laboratory techniques whilst utilizing scientific knowledge and technical procedure to analyse, evaluate and explain specific experimental outcomes.

Teaching and Learning Strategies
Introduction to the basic principles of nutritional biochemistry through lecture and laboratory based teaching. Regular evaluation of learning through weekly moodle based tests. Evaluation of lab-based learning through lab-reports and overall learning through end of semester written exam.
Module Assessment Strategies
Laboratory technique and report-writing ability are assessed as part of the practical work performed during the module. Regular summative tests are used to encourage engagement with the module, monitor progress and provide feedback. This approach enables the student to take timely corrective action, in the event of failure to achieve the required standard, before the results significantly impact on the final grade.
Repeat Assessments
Repeat written exam and or continuous assessment to be set on a case by case basis, however students will be asked to repeat the written exam component and or either of the continuous assessment components, where a mark of less than 40% was obtained in a component
Indicative Syllabus
Properties and structure of enzymes and some key digestive enzyme functions. Introduction to absorbance, transport and storage of key nutrients. Key nutrient metabolic pathways. Energy, metabolism and associated calorie calculations and determination. Introduction to DNA, genetic damage and their role in human health.
